Homemade bread with whole wheat flour and lots of grains.

Recipe Ingredients for Multi-grain bread

2 cup (8 fl oz) Water
42 grams Yeast
1/2 cup Milk, Reduced Fat, Fluid, 2% Milkfat
3.33 tbsp Organic Honey
2 tsp Salt, Table
2 1/2 cup Bread Flour
1/4 cup Vital Wheat Gluten
2 cup Whole Wheat Flour
1/4 cup Flaxseed
1/4 cup dry Old Fashioned Quaker Oats
1/4 cup Wheat Bran, Crude
4 tablespoon Raw Wheat Germ
1/4 cup Barley, Pearled
1/4 cup Hard Red Wheat Berries Organic
0.12 cup Sesame Seed Kernels, Toasted
0.33 tbsp Vegetable Oil

Recipe Directions for Multi-grain bread

  1. Proof the water, yeast, and honey in the bowl of a stand mixer with a dough attachment.

  2. Add the milk and salt, stir.

  3. Add the bread flour. Mix until most of the flour is mixed in.

  4. Add the wheat gluten.

  5. Grind the flax, oats, wheat berries, and barley, and combine in a separate bowl with the wheat bran, wheat germ, and sesame seeds.

  6. Add the grain mixture alternately with the wheat flour, until its all mixed in. Allow to knead for about 10 minutes, until elastic and smooth.

  7. Pour the oil on top and rub all over. Cover with a towel and allow to rise in a warm place for an hour.

  8. Punch the dough down, and divide into two. Roll each dough half into a rectangle, then roll the piece up, jelly roll style, and place in a 9x5 bread pan. Cover with a towel and allow to rise again for at least another hour.

  9. Bake at 400 for 30 minute. Freezes well.
