Recipe Ingredients for Multi-Grain Banana Pecan Muffins

1 egg
1 egg white
1/2 cup sugar
54 g smart balance spread
40 g apple sauce
1 cup unbleached white flour
1/2 tsp salt
1 tsp baking powder
1 tsp baking soda
1 cup Bob's Red Mill 10-Grain cereal
1 1/4 cup buttermilk, reduced fat
172 g banana, diced (2 medium bananas)
60 g pecans, chopped (about 1/2 cup)

Recipe Directions for Multi-Grain Banana Pecan Muffins

  1. Preheat oven to 400.

  2. Soak 10-grain cereal in buttermilk while oven is preheating and blending other ingredients.

  3. Cream sugar, egg, egg white, apple sauce and spread. Add in dry ingredients and cereal mixture. Blend until just mixed. Stir in bananas and pecans.

  4. Spoon into greased muffin tins.

  5. Bake for 15 minutes or until a toothpick inserted comes out clean.
