A Multi-Grain version of Anadama Oatmeal Bread. Very good and highly nutritious... :) I used Bob's Red Mill 5 Grain Rolled Cereal to replace Kashi's 7 Grain Cereal, and plain, yellow cornmeal, as well as a Favorite of Bob's Red Mill-- their Muesli-Old Country Style mix with nuts and dried fruit. :)

Recipe Ingredients for Multi-Grain Anadama Oatmeal Bread

3 serving - 5 Grain Rolled Cereal (one cup)
3 tbsp Cornmeal
2 cups water, boiling
1 1/2 tbsp Shedd's Spread Country Crock Original Margarine Spread
1 1/2 tbsp Canola Oil
3 tbsp Molasses
2 tsp Salt
2 1/2 cups Whole Wheat Flour
1 cup Bread Flour
1 serving - Dry Milk Powder (one third cup)
3 tbsp Gluten
8 7/10 grams - Fast Rise Yeast (three teaspoons)
2 servings - Muesli-Old Country Style (one half cup)

Recipe Directions for Multi-Grain Anadama Oatmeal Bread

  1. Combine first 3 items, stirring to remove lumps, and set to cool for 20 minutes. Place in Bread Machine. (Different measures are due to replacing the original crushed 7 Grain cereal that couldn't be found. For simplicity, I combined the original 1/3 cup and 1/2 cup measures to a basic 1 cup total.)

  2. Place all remaining items in Bread machine, in order given, except last item. (Again, replacing original cereal.) Also, do not add yeast inside machine till last, to prevent it from being wet too soon. (I used Hodgon's Mill Active Dry Yeast, esp. for Whole Grains. 1 package is 3 tsp. I added another tsp. as my yeast was older.)

  3. Start machine for Settings: Whole Wheat/2 lb./Med. Crust/Add Extras.

  4. Place last item in dispenser and start.

  5. Watch for dryness, and assist in combining by pausing and helping to add in dry mix in corners if it looks like a good idea. Should be a bit sticky, but not very wet.

  6. Takes 3:35 hours.
