4 c lower-sodium chicken broth
1 large leek
1 large carrot
14 oz skinless, boneless chicken breasts
1 red pepper
1 stalk celery
1 granny smith apple
1 t curry powder
1/4 t turmeric
1/2 t red pepper flakes
1/2 cup parsley

Recipe Directions for Mulligatawyny Soup

  1. Boil the broth in a large pot over medium-high heat.

  2. Add the leeks and carrots and return to a boil. Cover, reduce heat, and simmer 5 min.

  3. Add chicken and return to a boil. Cover, reduce heat, and simmer 10 min.

  4. Add remaining ingredients. Return to a boil. Cover, reduce heat, and simmer 5 min.

  5. Remove from heat. Add parsley and serve.
