A good soup with a spicy edge to it. Great for cold days. Often found in South Indian cuisine. Recipe from Green Cuisine Cookbook, 2006.

Recipe Ingredients for Mulligatawny Soup (vegan)

4 1/2 cups water
1/4 cup red lentils
1/4 cup brown basmati rice
1 cup onions, diced
3/4 cup carrots, sliced
1 stalk celery, sliced
2 cups cauliflower, chopped
1 1/2 cups zucchini, chopped
1/4 cup apples, chopped
1 garlic clove, minced
3/4 tsp salt
1/4 tsp turmeric
1/4 tsp cumin seeds
1/8 tsp thyme
2 tsp curry paste
1 tbsp ginger, grated
1 1/2 tsp lemon juice
1/8 cup raisins

Recipe Directions for Mulligatawny Soup (vegan)

  1. Simmer the first 4 ingredients (water, red lentils, basmati rice and onions) for 30 minutes.

  2. Add the rest of the veggies (and fruit) and simmer for 30 more minutes.

  3. Add seasonings and serve.
