great soup...taken from a dieters cookbook...one of my favs

Recipe Ingredients for mulligatawny soup

1 large Onions
1 cup, chopped Carrots
1 cup, diced Celery
1 1tsp Olive Oil
2 medium apple Apples
3 tsp Curry Powder
1 tsp Salt, Table
3 cup Chicken Broth
3 cup (8 fl oz) Water
1.5 cup Petite Diced Tomatoes - No Salt
10 oz Chicken, Breast, Meat Only

Recipe Directions for mulligatawny soup

in a large pot cook and stir onion, carrots and celery in hot oil over medium heat about 10 minutes or until crisp tender. reduce heat to med low. add apples, curry, salt. cook cover for 5 minutes. sitr in broth, water, and undrained tomatoes. bring to boiling, reduce heat. simmer uncovered for 10 minutes. sitr in the cooked chicken, simmer 10 minutes more and serve
