Very thick, hearty, spicy soup.

Recipe Ingredients for Mulligatawny Soup

6 cups chicken stock
1 medium onion, chopped
3 garlic cloves, chopped
1 carrot, chopped
1 celery stalk, chopped
1 green pepper, diced
2 small apples, diced
2 medium tomatoes, diced
2 tbsps curry powder
2 cups red lentils
2 cups diced cooked chicken

Recipe Directions for Mulligatawny Soup

  1. Sautee together onion, garlic, carrot, celery, green pepper and apple until softened

  2. Add stock, tomatoes, curry powder (hot pepper flakes if you want it hotter) and red lentils

  3. Simmer until lentils are tender and falling apart

  4. Test salt and sweetness - adjust as required. You may need to add a spoonful of sugar to balance flavour

  5. Add chicken and heat through. Don't heat too long or chicken will fall apart and be stringy
