Recipe Ingredients for Mulligatawny Soup

1/3 cup onion, chopped
2 stalks celery, chopped
1 carrot, diced
1/4 cup butter
1/2 apple, diced
4 cups chicken stock
1/2 boneless, skinless chicken breast, cubed
1 1/2 tbsp. flour
1 1/2 tsp. curry powder
1 pinch thyme
1 salt, to taste
1 pepper, to taste
2 tbsp fat-free sour cream
1/4 cup white rice

Recipe Directions for Mulligatawny Soup

  1. Saute veg in butter until soft.

  2. Add flour and curry powder, saute 5 minutes.

  3. Add stock, simmer 15 minutes.

  4. Add apple, chicken, rice, thyme, salt, pepper and simmer 15 - 20 more minutes.

  5. Add sour cream at the end, in bowls.
