Spicy Indian-inspired soup loaded with fiber from lentils and vegetables. If you like, garnish with chopped apple.

Recipe Ingredients for Mulligatawny Soup

2 cups red lentils
1 onion
1 stalk celery
1/2 red bell pepper
2 carrots
2 cloves garlic
4 cups low-sodium chicken broth
1 cup turkey
2 tbsp garam masala
1 Salt and pepper to taste

Recipe Directions for Mulligatawny Soup

Cook lentils til tender in broth. Chop next5 ingredients and saute together until soft. Stir in garam masala. Add vegetables to cooked lentils. Simmer 30 minutes. Let cool, puree in blender. Return to pot and add chopped or shredded turkey meat. Serve hot.
