Recipe Ingredients for Mulligatawny Soup

1 cup chopped onion
2 carrot, diced
2 teaspoons olive oil
1 1/2 tablespoons all-purpose flour
2 1/2 teaspoons curry powder
1/2 teaspoon cayenne
4 cups chicken broth
2 cups water
1/2 apple, cored and chopped
1/4 cup white rice
1 chicken breast, cubed
1/2 teaspoons salt
1 teaspoon pepper
1/4 teaspoon dried thyme

Recipe Directions for Mulligatawny Soup

  1. Saute the onion and carrot in olive oil in a large soup pot. Add flour, curry, and cayenne and cook 5 more minutes.

  2. Add chicken stock, mix well, and bring to a boil. Simmer about 1/2 hour.

  3. Add apple, rice, chicken, salt, pepper, and thyme. Simmer 15-20 minutes, or until rice is finished.
