A fantastic homemade Mulligatawny Soup

Recipe Ingredients for Mulligatawny Soup

75 grams Rice, Brown, Long-grain
25 grams Butter
2 large Onions
45 grams Tomato Puree
4 grams Curry Powder
30 grams Flour
45 grams Ginger
1 medium apple Apples
1 Cube Chicken Stock Cubes
13.5 fl oz Water
400 grams Lite Coconut Milk

Recipe Directions for Mulligatawny Soup

  1. Cook the rice.

  2. Use the water and stock cube to make 400ml of stock.

  3. Melt the butter in a pan, add the onions (chopped) sweat for 4 minutes until they begin to soften.

  4. Stir in the tomato puree, curry powder and flour, stir frequently for 2 minutes.

  5. Add the (grated) ginger and (grated) apple and stir over a high heat for a few minutes.

  6. Pour in the stock stirring and scraping the bottom of the pan to deglaze it.

  7. Add the coconut milk and bring back to a simmer. Let it simmer untill the soup is reduced slightly and thickened.

  8. Add the cooked rice and simmer for another 3-4 minutes.

  9. Season with salt and pepper to taste.

  10. Serve and enjoy
