Recipe Ingredients for Muligatawny Soup

1/2 cup chopped onion
2 stalks celery, chopped
1 carrot, diced
2 tsp olive oil
1 potato, peeled and sliced
1 1/2 teaspoons curry powder
4 cups chicken broth
1/2 apple, cored and chopped
6 oz skinless chicken breast
1 tsp salt
1 tsp ground black pepper
1 tsp dried thyme
1/2 cup milk 2%
6 tbsp sour cream

Recipe Directions for Muligatawny Soup

  1. Saute onions, celery, carrot, and olive oil in a large soup pot. Add curry and cook 5 more minutes. Add potato chicken stock, mix well, and bring to a boil. Simmer about 1/2 hour.

  2. Add apple, chicken, salt, pepper, and thyme. Simmer 15-20 minutes.

  3. When serving, 1 tbsp of sour cream.
