2 jumbo eggs
1/8 cup spinach
1/8 medium red onion
2 oz low fat cream cheese

Recipe Directions for Mug Omelette

  1. Spray microwavable mug with cooking spray.

  2. Combine eggs, spinach, red onion, and seasonings to taste in mug and microwave on high for 2 min.

  3. Add cream cheese and mix. Microwave for anther 30 sec - 1 min.
