Recipe Ingredients for Muffuletta Sandwich

1 c pitted olives, coarsely chopped
1/3 c roasted red peppers
1/4 c celery, diced
2 tbs parsley
2 tsp garlic, minced
2 tbs vinegar, red-wine
10 oz whole wheat bread
4 oz Genoa salami
4 oz mortadella
4 oz provolone

Recipe Directions for Muffuletta Sandwich

  1. Combine olives, peppers, celery, parsley, garlic and vinegar by chopping food processor or just chop & combine. Set aside.

  2. Hollow out bread. Spread half of olive salad on each side; layer salami, mortadella and provolone on the inside. Assemble sandwich; press down and let stand 10-15 minutes. Wrap in plastic; let stand 1 hour.

  3. Unwrap; cut into 6 wedges, then wrap for transport or serve.
