Healthy, fruit enfused muffin to start the day of right.

Recipe Ingredients for Muffins try 1

2 cups self-rising
2 teaspoons ground cinnamon
1 teaspoon ground cloves
2 medium apples (1.33 cups), peeled, cored, and chopped
1 cup finely shredded carrots
1/2 cup raisins
8 ounce crushed pineapple, undrained
180 g applesauce
2 eggs
1/2 teaspoon vanilla

Recipe Directions for Muffins try 1

  1. Line eighteen 2-1/2-inch muffin cups with paper bake cups and set aside.

  2. In a medium bowl combine undrained pineapple, applesauce, eggs, and vanilla and set aside

  3. In a large bowl combine flour,cinnamon, cloves and nutmeg and mix well.

  4. Stir in brown sugar

  5. Stir in apples, carrots, and raisins.

  6. Add pineapple mixture to flour mixture

  7. Stir just until moistened.

  8. Spoon batter into prepared muffin cups.

  9. Bake in a 375 degree F oven about 18 minutes or until a wooden toothpick inserted in centers comes out clean.

  10. Cool in muffin cups on wire rack for 5 minutes. Remove from muffin cups; serve warm.

  11. Makes 18 muffins

  12. Can be frozen and stored if desired, or kept in sealed bag for up to 4 days.

  13. To thaw, wrap in foil and put in a 300 F oven for 15-18 mins.

  14. Alt: Can also be cooked in the easy Brownie pan shown on TV which has the cutter/divider. It makes 18 small loaves which turn out very nice.
