blue berry and cranberry rye muffins

Recipe Ingredients for Muffins

2 cups rye flour
3 teaspoons baking powder
1/2 teaspoon salt
3/4 cup sugar
1 egg
1 cup milk
1/4 cup vegetable oil
1/2 cup blueberries
1/2 cup cranberries

Recipe Directions for Muffins

  1. Preheat oven to 400ĚŠ

  2. Stir together the rye flour, baking powder, salt and sugar in a large bowl.

  3. In a small bowl beat egg with a fork. Stir in milk and oil.

  4. Pour small bowl mixture into the flour mixture, mix quickly with a fork until moistened, but do not beat.

  5. Add blue berries and cranberries to mixture and mix well

  6. Spoon batter into paper lined muffin pan cups.

  7. Bake for 25-30 minutes, or until golden.
