A fruit-sweetened (though not very sweet at all) whole grain low-cal, high fiber muffin.

Recipe Ingredients for Muffins: No Sugar Banana Muffins

2 Bananas
1 cup Unsweetened Apple Sauce
1 cup Whole Wheat Flour
1 cup Whole Wheat Pastry Flour (or Oat Flour)
1/2 cup Wheat Bran
1 tsp baking soda
3 tsp nutmeg
1/4 tsp salt
1 egg
1 tbsp Extra Virgin Olive oil

Recipe Directions for Muffins: No Sugar Banana Muffins

  1. Blend banana, egg, oil, and applesauce in a blender or food processor.

  2. Mix the dry ingredients in a bowl.

  3. Add the bananna mixture to the dry ingredients and stir until moist throughout. Water, Milk or Whey can be added if needed.

  4. Spoon into muffin tins.

  5. Bake at 300 for 20-25 minutes or until done
