Recipe Ingredients for Muffins, Low Fat

1 1/2 cup whole wheat pastry flour
1/2 cup oats
1/4 cup pecans, chopped
1 cup strawberries
1/4 cup dried cranberries
1 tsp cinnamon
1 tsp baking powder
1/4 tsp salt
1 egg
1/4 cup honey
1/4 cup applesauce
1 tbsp olive oil
3/4 cup milk
1 tsp vanilla

Recipe Directions for Muffins, Low Fat

  1. Combine dry ing. and fruit.

  2. Whisk wet ing.

  3. Stir wet and dry ing. together just until incorporated.

  4. Spoon batter into lightly sprayed muffin tins (12 large).

  5. Bake at 400 for 18 minutes.

  6. Use a knife to loosen the edges of muffins from the tin and tip each one onto its side to cool.
