Recipe Ingredients for Muffins, GI Diet

1 cup bran
1 cup bran cereal
1 1/2 cups fat-free yogurt
2 cups whole wheat flour
1 T baking powder
2 tsp baking soda
1 egg
1/2 cup skim milk
2 tsp vanilla
2 pears
1/4 cup canola oil
1/2 cup brown sugar substitute

Recipe Directions for Muffins, GI Diet

  1. Mix bran/bran cereal/yogurt together and sit for 10 min.

  2. In large bowl stir together flour, powder, soda, sugar.

  3. To bran mixture add egg, milk, vanilla, oil.

  4. Mix well. Add to flour mixture just until combined. Add pear. Scoop into greased muffin tin. Bake at 375 for 25 minutes untiltops brown. Remove from oven and cool for 5 minutes. Store in sealed container.
