Recipe Ingredients for Muffins with fruit

1 3/4 c all purpose flour
3 tbl sugar
2 1/2 tsp baking powder
2 tbl unsalted margarine
3/4 c rice milk
1/4 c egg beater
1 c blackberries

Recipe Directions for Muffins with fruit

  1. Combine flour, sugar and baking powder in large bowl

  2. Melt the margarine, pour into a small bowl and add the milk, egg beater and fruit. Whisk to combine.

  3. Add to the flour mixture and stir until just moistened.

  4. Spoon into prepared muffin cups or papers (half full).

  5. Bake at 400 degrees for 15 minutes.
