Replace some of the milk with eggnog to use it up!

Recipe Ingredients for Muffins -- Eggnog

1 cup white flour
1 cup wheat flour, whole-grain
1 tsp salt
3 tsp baking powder
1 tsp nutmeg
1/3 cup light brown sugar
2/3 cup cherries, dried
2/3 cup walnuts
1/2 cup canola oil
1/2 cup eggnog
1/4 cup skim milk
1 tsp vanilla extract
1 egg

Recipe Directions for Muffins -- Eggnog

  1. Preheat oven to 400 degrees F

  2. Mix dry ingredients together, toss with nuts and cherries

  3. Whisk oil, milk, eggnog, extract and egg together

  4. Fold wet ingredients into dry ingredients

  5. Spoon into 12 non-stick muffin cups sprayed with Pam

  6. Bake for 16 minutes or until toothpick comes out clean

  7. Let cool in pan for 5 minutes, remove from muffin tin and cool on rack
