Carrot muffins with raisins, nuts, coconut

Recipe Ingredients for Muffins -- Carrot

1 cup white flour
1 1/4 cups wheat flour, whole-grain
1 tsp salt
2 tsps baking soda
3/4 cup granulated sugar
1/2 cup raisins
1/2 cup chopped walnuts
1/2 cup unsweetened coconut
3 tsp cinnamon
1 tsp vanilla extract
2 eggs
1/2 cup canola oil
3/4 cup skim milk
2 cups carrots, shredded
1 apple, shredded

Recipe Directions for Muffins -- Carrot

  1. Preheat oven to 350 degrees F

  2. Mix dry ingredients together

  3. Shred carrots and apple using food processor or hand grater

  4. Whisk oil, milk, eggs, extract together

  5. Add dry ingredients, carrots and apple to dry ingredients and mix until just moistened

  6. Divide batter among 12 muffin cups

  7. Bake for 20 minutes or until toothpick comes out clean

  8. Cool pan on rack for 10 minutes, remove from pan and cool completely on rack
