1 1/2 cup canned pumpkin puree
1/4 cup vegetable oil
1/2 cup white sugar
1/2 cup splenda
2 eggs
1 cup Whole Wheat Flour
1/2 cup wheat germ
2 tbls flax seed meal
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cloves
2/3 cup semisweet chocolate chips

Recipe Directions for Muffins/Bread - Pumpkin Chocolate Chip

  1. Preheat the oven to 350 degrees F (175 degrees C).

  2. Grease and flour 9x5 inch loaf pan or muffin tin.

  3. In a large bowl, mix together the pumpkin, oil, sugar, and eggs.

  4. Combine the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves; stir into the pumpkin mixture until well blended.

  5. Divide the batter evenly between the prepared pans.

  6. Bake in preheated oven for 45 minutes to 1 hour.

  7. The top of the loaf should spring back when lightly pressed.
