This makes 12 regular or 6 jumbo muffins

Recipe Ingredients for Muffins, blueberry

303 g unbleached all-purpose flour
2 tsp baking powder
1 tsp baking soda
1/8 tsp salt
70 g sugar
1/2 c canola oil
1 large egg
1 large egg yolk
8 oz dannon plain nonfat
1 c blueberries

Recipe Directions for Muffins, blueberry

  1. preheat oven to 375F

  2. sift together all dry ingredients

  3. in separate bowl, combine eggs oil, yogurt and sugar

  4. add wet ingredients to the dry ingredients and stir until JUST combined. DO NOT OVERMIX.

  5. grease and flour muffin pan

  6. fill muffin tins 1/2 to 2/3 full

  7. bake for 20 minutes, or until a toothpick comes out clean when inserted into the middle of the muffin
