This is one of the few bran muffin recipes I've tried that doesn't make me feel like I'm eating soggy sawdust. If you need the extra fibre, give it a try! These also freeze and reheat very well. I sometimes reduce the sugar to a 1/4 cup or less, depending on how ripe the bananas are.

Recipe Ingredients for Muffins: Banana Apricot Bran

1 1/2 cups wheat bran
1 cup whole wheat flour
1 1/2 tsp baking soda
1/2 tsp salt
75 g (1/2 cup) dried apricots, diced
1/4 cup vegetable oil
1/3 cup brown sugar
1 egg, lightly beaten
2 ripe bananas, mashed
250 g (1 cup) plain 2% yogurt

Recipe Directions for Muffins: Banana Apricot Bran

  1. Combine bran, flour, baking powder, soda, salt and apricots; mix lightly.

  2. In a large mixing bowl, combine oil, sugar, egg, bananas, and yogurt. Mix well.

  3. Add dry ingredients and mix just until combined.

  4. Spoon batter into nonstick or lightly greased muffin tins. Bake at 400F/200C for 20 minutes or until firm to the touch.

  5. Remove from pan and let cool. Makes 12 medium-size muffins.
