Recipe Ingredients for Muffins: apple and carrot, vegan

3/4 cup brown sugar
1/4 cup white sugar
2 1/2 cups spelt flour
4 tsps baking soda
1 tsp baking powder
4 tsps ground cinnamon
2 tsps salt
2 cups carrots, finely grated
2 apples, peeled cored and shredded
6 tsps egg substitute
1 1/4 cups applesauce
1/4 cup vegetable oil

Recipe Directions for Muffins: apple and carrot, vegan

  1. Total time: 40 min Prep time: 20 min

  2. Preheat oven to 375 degrees F (190 degrees C). Grease muffin cups or line with paper muffin liners.

  3. In a large bowl combine brown sugar, white sugar, flour, baking soda, baking powder, cinnamon and salt. Stir in carrot and apple; mix well.

  4. In a small bowl whisk together egg substitute, applesauce and oil. Stir into dry ingredients.

  5. Spoon batter into prepared pans.

  6. Bake in preheated oven for 20 minutes. Let muffins cool in pan for 5 minutes before removing from pans to cool completely.
