Makes 12 servings



Getting a bit high in calories, but amazingly good, and provides 18% of the daily fibre. Grab and go in the morning.

Recipe Ingredients for Muffins, All Bran

2 cups all-bran cereal
1 1/4 cups milk, skim
1 1/4 cups flour
1/2 cup sugar
1 tbsp baking powder
1/4 tsp salt
1 egg, beaten
1/4 cup vegetable oil
1 tsp vanilla

Recipe Directions for Muffins, All Bran

  1. Combine All bran and milk. Soak for 5 minutes to soften the bran.

  2. Stir together remaining dry ingredients.

  3. Add the egg, vegetable oil, and vanilla to the bran/milk mixture.

  4. Add flour mixture to the wet ingredients, stirring only until combined.

  5. Pour into 12 muffin cups coated with cooking spray OR lined with paper cupcake-cups.

  6. Bake at 400 degrees for about 20 minutes.

  7. These freeze very well.
