Individual Breakfast Frittata. Make ahead and freeze. Serve with fruit.

Recipe Ingredients for Muffin Tin Breakfast Frittata-4 ww pts.

6 large egg
6 egg whites
3/4 c skim milk
6 slices canadian bacon
6 red potatos
3/4 c sharp cheddar cheese
1/4 c onion, diced
1 c spinach
2 T olive oil

Recipe Directions for Muffin Tin Breakfast Frittata-4 ww pts.

  1. dice or shred potato

  2. dice onion (small)

  3. grate cheese

  4. dice bacon

  5. saute onions and potato in oil

  6. add spinach

  7. beat egg and milk together. add salt & pepper to taste

  8. spray 12 muffin tins with non-stick spray

  9. add saute to tins and pour egg mix over. bake 350

  10. until done
