Muffins from scratch without the fruit pulp

Recipe Ingredients for Muffin Mix

1 3/4 cup unbleached all-purpose flour
1 cup sugar
3/4 cup lowfat milk
2 1/2 tsp baking powder
1 tsp salt
1 egg
1/3 cup melted butter

Recipe Directions for Muffin Mix

  1. Mix dry ingredients

  2. Blend in 1 cup of leftover fruit pulp from juicing

  3. Add egg, milk and butter

  4. Spoon into greased or nonstick muffin pan

  5. Bake 400 degress for 25 minutes or until tops spring back

  6. Use butter knife to remove from pan and cool on rack.

  7. Best served warm.
