Easy to prepare, low carb, nutritious muffin. It is not sweet as I do not use splenda, but adding a packet will make it sweet.

Recipe Ingredients for muffin in a minute

3 tbs flax seed meal
1/2 tsp baking powder
2 tsp cinnamon
1 Egg, Whole
1/2 tbs coconut oil

Recipe Directions for muffin in a minute

  1. melt coconut oil.

  2. Mix all ingredients in a coffee mug.

  3. Stir, mixing well.

  4. Microwave on high 1 minute or more.
