Recipe Ingredients for "Muffin" Fritata

6 medium eggs
1 cup skim milk
1 tbsp whole wheat pastry flour
1 ounce bacon
2 cups squash
1 ounce feta cheese

Recipe Directions for "Muffin" Fritata

  1. Dice the bacon and fry until crisp. Drain on paper towel. Crumble the feta or other strong-flavored crumbly cheese. Grate the summer squash on a box grater until you have 2 cups. Drain on paper towel. Mix bacon and cheese together in a small bowl.

  2. Beat eggs, milk and flour in a blender until nice and smooth. Season with salt and pepper to taste.

  3. Spray a 12-cup muffin pan with butter-flavored cooking spray. Evenly distribute bacon and cheese mixture into each muffin cup. Next do the same with the grated squash.

  4. Pour the egg mixture evenly into each muffin cup. It should fill almost to the top.

  5. Bake in a 350 degree oven, top rack for approx. 35 minutes.
