Add nuts, fruit and flavorings for variety

Recipe Ingredients for muffin Base

6 cups whole wheat flour (or mixed grains)
5 tbsp flax seeds, ground
2 tsp salt
2 tbsp baking powder (non-aluminum)
1/4 cup oil, melted palm shortening
1/4 cup applesauce
1 1/2 cup coconut milk
2 3/4 cup water (1 1/2 cans)
3/4 cup honey
1 tbsp vanilla

Recipe Directions for muffin Base

  1. Mix dry ingredients in large bowl. Set aside.

  2. Combine all wet ingredients and add to the flour mixture and mix just until combined.

  3. Bake at 375 for 18-20 minutes.
