EXCELLENT Dish!! From Prevention.com. I added cashews to complete the Flat Belly requirement. To make this faster, just use a 14 oz bag of cole slaw mix.

Recipe Ingredients for Mu Shu Chicken

2 cups cooked chicken
4 cups cabbage, shredded
1 cup purple cabbage, shredded
1/2 cup scallions, sliced
1 tablespoon garlic, minced
2 tablespoons ginger, minced
2 tablespoons extra virgin olive oil
1/2 tsp cornstarch
1 tablespoon reduced sodium soy sauce
2 tablespoons cooking sherry
2 tablespoons hoisin sauce
1/4 cup cashews, chopped
1 tsp sesame oil

Recipe Directions for Mu Shu Chicken

  1. Whisk cornstarch, cooking sherry, hoisin sauce and soy sauce in a small bowl.

  2. Heat olive oil in wok or large skillet. Add garlic and ginger and stir fry for 1 minute.

  3. Add cabbage and scallions and stir fry for about 3 minutes or until vegetables begin to wilt.

  4. Add chicken and sauce mixture and stir to combine. Add cashews and heat through. Drizzle with sesame oil. Serve with warmed tortillas or pita.
