Recipe Ingredients for MrsDustbagC's Strawberry Rhubarb Pie

2 Pillsbury Pie Crusts
3 cups strawberries
3 cups rhubarb
4 teaspoons Smart Balance
1 1/3 cups Splenda
1 tablespoon orange peel, dried & grate
1/3 cup flour

Recipe Directions for MrsDustbagC's Strawberry Rhubarb Pie

  1. Rinse and slice up strawberries, enough for 3 cups.

  2. Rinse and cube up rhubarb, enough for 3 cups.

  3. In a separate bowl, combine 1 1/3 cups Splenda, 1/3 cup flour, and 1 tablespoon dried, grated orange peel.

  4. Unroll pastry, smooth out and lay in pie pan. Prick bottom of crust with fork. Put half of the strawberry-rhubarb mixture into the uncooked bottom crust in pie pan. Sprinkle with 1/2 of the Splenda, flour mixture. Top with the remaining strawberry-rhubarb, and top with 4 teaspoons cold Smart Balance. Roll out top crust, smooth out. Lay on top of pie, trim edges to edge of pie pan. Flute, and cut 4 vents. Cover crust edge with thin strips of aluminum foil to prevent over-browning, put in pre-heated 400 degree oven for approximately 25 minutes. Remove foil edging, bake for an additional 10 to 15 minutes until uniformly browned.
