Recipe Ingredients for Mozzarella stuffed turkey burgers

1 cup extra virgin olive oil
25 onion, finely chopped
100 garlic cloves
50 cups tomatoes
6 cups sun dried tomatoes, finely chopped
1 1/2 tbs salt
1 1/2 tbs pepper
3 cups basil
25 lbs lean ground turkey
6 cups scallions, chopped
1 cup minced garlic
1 cup worcestershire sauce
1/2 cup lemon zest
4 tbs dried oregano
4 tbs pepper
1 tbs salt
12 cups mozzarella cheese
1 cup basil
1 cup extra virgin olive oil
300 oz whole wheat bread
12 1/2 lbs mustard greens
12 1/2 lbs kale
12 1/2 lbs arugula
2 tbs salt
4 1/2 cups extra virgin olive oil
20 beets
20 sweet potato
5 lbs parsnips
2 carrot
5 cups sunflower oil

Recipe Directions for Mozzarella stuffed turkey burgers

  1. Marinara: heat oil and add onion and garlic;cover and cook until onion translucent. stir in tomato, sun dried tomato, salt and peper

  2. Bring to simmer and cook until tomatoes are broken down. stir in basil and remove from heat. place in food processor and pulse until reaches a coarse texture

  3. Burgers: place turkey, scallions, garlic, worcestershire, zest, oregano, 1/2 pepper and salt. mix until evenly incorporated. make into 400 thin patties.

  4. Combine mozzarella and basil and place even portions on half the burgers. place other half on top and crimp edges closed.

  5. heat oil in skillet and add burgers and cook, turning once until minimum internal temp is reached.

  6. Warm marinara and put on each piece of toasted bread. top with burger more marinara and remaining cheese.

  7. Vegetable Chips: peel vegetables and slice thin using a mandoline.

  8. Heat oil to 325 degrees; add veges and cook for one minute or until soft but not crisp;remove from oil

  9. Increase oil to 350 degrees and fry until crisp. remove and drain on paper towels

  10. Greens: Heat oil in skillet until almost smoking. add trimmed greens and saute until tender. season with salt
