Easy & creative meatloaf recipe. Use low sodium crackers to reduce the sodium.

Recipe Ingredients for Mozzarella Meatloaf

1 1/2 lbs. lean ground beef
2 eggs
1/4 chopped yellow onion
16 oz. mozzarella cheese
1/2 tbsp. worcestershire sauce
128 grams Ritz crackers
8 oz. tomato sauce

Recipe Directions for Mozzarella Meatloaf

  1. Mix all ingredients except cheese and 1/2 cup of the tomato sauce.

  2. Spread out mixture onto a piece of waxed paper and pat into a rectangle about 1/2 inch thick.

  3. Sprinkle mozzarella cheese on the meat.

  4. Roll up jelly roll fashion and place carefully in loaf pan.

  5. Pour the remaining 1/2 cup of tomato sauce over the meatloaf.

  6. Bake at 350 degrees for 1 hour.
