A delicious if fatty vegetarian melt. Substitute low cal margarine and low fat cheese for a healthier treat.

Recipe Ingredients for Mozerella Tomato Melt

2 slices bread (pumpernickel)
1/2 small onion, finely diced
1 tomato, diced
1/4 cup thinly sliced fresh mozzarella
1/2 tsp finely minced garlic
2 tablespoons oil
1 tsp Horseradish Mustard
2 tbsp Butter or margarine

Recipe Directions for Mozerella Tomato Melt

  1. Heat oil in a frying pan. Cook onions and garlic on low to medium heat until caramelized. Add tomatoes, until warmed through and slightly sweated. Remove mixture to a bowl and clean pan, placing back on the heat when done.

  2. Butter the bread on one side, mustard on the other. Place one slice butter side down in the hot pan. Add a layer of the mozzarella. Add the tomato and onion mixture. Add another layer of the mozzarella and the second slice of bread, mustard size down.

  3. Flip once when toasted. Serve immediately.
