Hearty casserole, mostly greek. Great with greek salad. red Table wine.

Recipe Ingredients for Moussaka with rigatoni

1 lb ground beef
1 lb italian sausage
1 lb mushrooms
1 lb eggplant
1 tsp cinnamon
1 tsp oregano
1 1/2 tsp salt
1 tsp black pepper
14 oz canned, diced tomatoes
4 oz butter
1/4 c white flour
3 c skim milk
2 egg yolks
1/2 lb dry rigatoni
1/2 c green pepper

Recipe Directions for Moussaka with rigatoni

  1. Brown ground beef with 1/2 tsp salt. Add italian sausage and brown it. Add onion, green peppers, eggplant and spices and simmer for 15 minutes. (May be made a day in advance and refrigerated.

  2. Boil rigatoni in ample water with 1/2 tsp salt for 10 minutes. (It may be somewhat al dente. Drain and mix with meat mixture. Pour into buttered lasagna pan.

  3. Make bechamel:

  4. melt butter and add flour, white pepper and nutmeg to taste, until it bubbles. Add all milk and stir with wire whisk until it reaches the consistencey of a thick gravy. (approx. 8 minutes on medium high heat.) Remove from heat and cool for a few minutes.

  5. Beat two egg yolks well, and add to bechamel. Pour and spread bechamel over meat/rigatoni mixture. Place in pre-heated 375 degree oven for 50 minutes.

  6. Allow to cool for 15 minutes before serving.
