lighter version. Don't top with Bechamel. I use a little parm on single servings

Recipe Ingredients for Moussaka

1 lb lean ground beef
1 cup onion, chopped
1 cup carrot , chopped
1 cup celery, chopped
1 eggplant, sliced (roasted or grilled)
5 medium potatoes, sliced
15 ounces tomatoes, diced (1 can no salt added)
1/4 cup tomato paste
1 tbs cinnamon
1/2 tsp allspice
1 tsp oregano (or 3tbs fresh)

Recipe Directions for Moussaka

  1. brown meat set aside

  2. brown vegis in a little wine or broth and sweat

  3. add tomatoes, paste and seasoning

  4. simmer until tender

  5. layer meat, sauce, eggplant, potatoes like a lasagna

  6. bake covered with foil 375 for about an hour until potatoes are tender
