A much lighter version of the original Mediterranean delight!

Recipe Ingredients for Moussaka

1/2 pound ground turkey breast
1 tsp olive oil
1/2 cup diced onion
1 tsp minced garlic
1 tsp dried mint
1 tsp dried oregano
1 tsp dried parsley
8 oz. tomato sauce
1 tbls sugar
2 red potatoes
1 medium eggplant, sliced
2 tbls parmesan cheese
3 egg whites
1/2 cup skim milk
1 pinch nutmeg
1/4 cup shredded mozzarella

Recipe Directions for Moussaka

Cut eggplant into 1/4 inch slices. Salt and let sit for 15 minutes to draw out excess moisture. Heat skillet over medium heat. Add olive oil, garlic and onion. Cook until fragrant. add ground turkey and cook until browned and crumbly. Add 1/2 the can of tomato sauce, the sugar and about 1/4 cup water to meat mixture. Reduce heat and simmer for about 15 minutes until slightly thickened. Place eggplant on foil lined baking sheet after patting with paper towels to remove beaded moisture. Place under broiler for 10 minutes or until brown. Flip. Repeat. While eggplant is browning, prick potatoes with a fork and place in microwave on high for 5 minutes. Allow to cool slightly, and then slice into thin slices. Layer eggplant,meat mixture and a layer of potatoes in a small casserole dish, repeating until everything is in the pan, ending with eggplant. Mix egg whites, milk, parmesan and nutmeg and pour over layers. Pour remaining 4 oz. tomato sauce over entire mixture. Top with mozzarella cheese. Bake for 30-40 minutes at 375.
