A vegetarian and lower calorie alternative. If eggplant is not available, a layer of about 3-4 ounces of raw spinach torn in bite-sized pieces is tasty. (In the Greek cookbook where this was found, the tomato sauce listed was referred to in the description as paste, with an extra cup of water listed then making sense, but I used sauce with 1 cup water).

Recipe Ingredients for Moussaka

4 cups potatoes, raw, thinly sliced
1 eggplant, sliced thin
3 onions, chopped
4 tablespoons olive oil
12 ounce veggie crumbles
16 ounces tomato sauce
1 cup water
1 1/2 teaspoon salt
1/2 teaspoon cinnamon
1/8 teaspoon nutmeg
1/8 teaspoon pepper
3 tablespoons margarine
7 tablespoons flour
3 cups milk
3 eggs, beaten
1/2 cup parmesan cheese, grated

Recipe Directions for Moussaka

  1. Arrange the potato slices in a large rectangular casserole pan (9x13 or 10x15). Cover and steam in microwave until tender, about 8 minutes.

  2. Oil a cookie sheet and tops of eggplant slices with 1/2 of the olive oil. Bake at 350 degrees for 15-25 minutes, until tender. Layer on top of the potatoes.

  3. While eggplant is cooking, sauté onions in remaining olive oil. Add crumbles, tomato sauce, water, and spices. Cook, stirring often, until thickened, about 15 minutes. Pour and spread over eggplant. Sprinkle with grated parmesan cheese. The moussaka can be refrigerated at this point, adding topping and baking before serving.

  4. Melt margarine in saucepan; blend in flour and cook about 1 minute. Add milk and cook until thick, stirring constantly with a whisk. Add a small amount of mixture to the eggs, stirring constantly. Add eggs to saucepan; cook 2 minutes longer. Spread on top of the moussaka layers. Sprinkle with remaining cheese.

  5. Bake at 350 degree oven until lightly browned, about 30-35 minutes. Let stand 10 minutes before serving.
