Hearty Greek Casserole. Smells heavenly while cooking!

Recipe Ingredients for Moussaka

1 T Olive Oil
1/2 c. onion, chopped
2 cloves garlic
14 oz. tomatoes, diced
1 medium green pepper
1/2 t. dill
1/4 t. cinnamon
3 T. parsley
1 large eggplant, sliced
1 large zucchini, sliced
2 T butter
1/3 c. unbleached white flour
2 c. skim milk
1/8 t. nutmeg
5 ozs. feta cheese, crumbled
2 slices wheat bread, diced into small cubes
4 T parmesan cheese

Recipe Directions for Moussaka

  1. Saute the onions and garlic in oil.

  2. Add diced tomatoes, diced pepper, dill, ciinnamon, and parsley. Simmer uncovered about 30 minutes.

  3. While sauce is cooking, lightly oil a baking sheet and place eggplant slices on it. Salt lightly, cover with foil and bake at 375 for 30 minutes.

  4. Saute the zucchini in non-stick skillet, just until tender.

  5. Make the custard: heat milk in microwave. In saucepan, melt butter on mdeium heat. Stir in flour and cook for 3 minutes, whisking so it does not scorch. Gradually pour in the hot milk, continuing to whisk into smooth, thick sauce.

  6. Allow custard to cool about 10 minutes. Add nutmeg.

  7. Using 9x13x2 inch baking dish, spread half of tomato sauce on bottom. Layer eggplant slices, then half the feta cheese and half of the bread, then the rest of the sauce, the zucchini slices, remaining feta cheese and bread cubes.

  8. Top with custard. Sprinkle parmesan cheese over top.

  9. Bake uncovered at 375 for 45-60 minutes. Custard should be bubbly and golden. Allow to sit for 15 minutes before serving.
