Eggplant Casserole, adapted from Joy of Cooking, page 491

Recipe Ingredients for Moussaka

3 Eggplant
1 cup onions
3/4 cup olive oil
2 lb. lean ground lamb
3 tablespoons tomato paste
1 cup chicken stock
1/4 tsp. nutmeg
3 tablespoons butter
1/3 cup flour
1 cup milk
3 egg yolks

Recipe Directions for Moussaka

  1. Preheat oven to 350 degrees..

  2. Cut eggplant lengthwise into slices 1/4-1/2" thick. Salt generously and and let drain in a colander at least 45 min. (You may place a plate with something heavy on top of it to encourage the eggplant to shed moisture.) Meanwhile, saute onions in 1/4 cup olive oil until transparent.

  3. Add and brown lamb. Stir in tomato paste, stock and nutmeg. Simmer gently 45 minutes.

  4. Rinse and drain eggplant slices. Quickly saute eggplant in remaining olive oil until browned. Use as little oil as possible as the eggplant will soak it up. Place eggplant on paper towels to remove excess oil.

  5. Prepare a white sauce using 3 tablespoons butter, 1/3 cup flour and 1 cup 1% milk - Melt butter and stir in flour to create roux. Add milk, quickly at first, then more slowly, to make a lump-free sauce. Whisk each time after adding milk until the sauce is thickened and smooth.

  6. Crack eggs and separate whites from yolks. Add a small amount of the white sauce to the egg yolks; stir quickly. Once yolks are seasoned, add to white sauce and stir.

  7. Assemble casserole in a 9x13 baking dish, starting 1st with a layer of eggplant, then the meat mixture & ending with eggplant. Cover with the white sauce; sprinkle lightly with nutmeg. Bake until heated through, approx. 45 minutes.

  8. Notes: Ground beef or pork may be used in place of lamb; eggplant does not need to be peeled - cooking unpeeled eggplant increases the fiber content; 1 cup canned drained tomatoes can be used in place of the tomato paste; parmesan cheese can be sprinkled over the white sauce but will increase the calories per portion
