This is a delicious Greek dish which I modified to use meal starters instead of hamburger and mashed cauliflower in place of the mashed potatoes

Recipe Ingredients for Moussaka - Meatless

4 cups eggplant
2 cups tomato
1 medium onion
1/2 tsp salt
1/2 tsp cinnamon
12 oz Morning Star Farms Meal Starter Recipe Crumbles
16 oz cauliflower
1/4 cup reduced fat sour cream
1/4 cup egg beaters
1 cube chicken bouillon

Recipe Directions for Moussaka - Meatless

  1. Slice eggplant, and set aside. (about 1/4" thick)

  2. Dice onion and saute with meal crumbles, salt, cinnamon and 1 can of petite diced tomato

  3. Preheat oven to 450'

  4. Spray 1 quart casserole and line bottom with eggplant then alternate layers with meat mixture.

  5. Cover w/tin foil and bake 45 minutes until eggplant is tender

  6. Cook frozen cauliflower until very tender

  7. Mash cauliflower with sour cream,bouillon and egg beaters

  8. Spread over eggplant meat casserole and spray with butter flavored cooking spray

  9. broil for 5 minutes
