A blend of American and a Greek comfort food with a light touch.

Recipe Ingredients for Moussaka Mac and Cheese

16 oz 1 box whole wheat macaroni shells
4 cups skim milk
1/2 tsp salt
1/2 cup whole wheat white flour
3 cups shredded part skim mozzarella
1 eggplant, peeled, medium to large sized
4 1/4 oz can of chopped black olives
2 tsp garlic powder
1 tbs rosemary
1 tsp ground mustard
1 tbs thyme
1 tbs ground bay leaf

Recipe Directions for Moussaka Mac and Cheese

  1. 1 Mix all dried spices (using only half the garlic powder-1 tsp) and set aside for later (this is basically Penzeys' Brand Bavarian seasoning blend which I buy pre-mixed)

  2. 2 cook pasta about three quarters of the recommended time on the package. Drain immediately. The pasta will continue to cook and soften while baking

  3. 3 Put the flour, salt and 1 tsp garlic powder in a large saucepan and slowly whisk in milk, blending completely

  4. 4 Cook the milk and flour (you are making a lite Bechamel sauce) over medium heat, stirring constantly until thickened.

  5. 5 Remove Bechamel from heat and put to the side

  6. 6 layer half of your pasta and half of your eggplant in the bottom of a large casserole dish

  7. 7 pour half of your bechamel sauce over the pasta and eggplant

  8. 8 sprinkle lightly with your blended seasonings--it's okay if you don't use it all

  9. 9 layer in half your cheese

  10. 10 sprinkle with half your olives

  11. 11 Repeat steps 7-10, creating another layer with your remaining ingredients

  12. 12 Bake in a 350 degree oven for 35 to 40 minutes until the top is slightly brown and bubbly.
