eggplants & chickpeas in tomato sauce

Recipe Ingredients for moussa'a3a

200 g onion, chopped
15 g garlic, sliced
350 g eggplants, peeled & cut into chunks
400 g tomato, canned, diced
260 g garbanzo beans, canned
200 g water
1 tbsp corn oil
1/4 tsp salt
1/4 tsp black pepper
1/2 tsp cumin

Recipe Directions for moussa'a3a

  1. saute onion in oil, then add garlic

  2. add eggplants and saute till coated

  3. add tomato, chickpeas, condiments

  4. add water if necessary to just cover veggies

  5. boil then simmer about 20 min
