Recipe Ingredients for Mother's Ham Casserole

2 potato large (3" to 4-1/4" dia) Potatoes, Russet, Flesh And Skin, Baked
3 serving Smithfield Hardwood Smoked Half Ham
1 cup, strips or slices Carrots
3 cup (8 fl oz) Water
1 medium Green Bell Pepper
1 large Onions
4 tbsp ICBINB! Light (Soft)
0.17 cup Gold Medal All Purpose Flour
1 1/2 serving Fat Free Milk
1 tsp Pepper, Black
1 serving Bread Crumbs Italian Style
1 cup Cheese
26 grams Wheat Germ

Recipe Directions for Mother's Ham Casserole

  1. In a saucepan, bring the potatoes, carrot and water to a boil. Reduce heat; cover and cook about 15 minute or until tender. Drain.

  2. In a large skillet, saute the ham, green pepper and onion in 2 tablespoons butter until tender. Add to the potato mixture. Transfer to a greased 1-1/2-qt. baking dish.

  3. In a saucepan, melt the remaining butter; stir in flour until smooth. Gradually add milk, salt and pepper. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat; add cheese and stir until melted. Pour over the ham mixture. Sprinkle with bread crumbs and wheat germ. Bake, uncovered, at 375 degrees F for 25-30 minutes or until heated through.
