A nearly fat-free sponge cake recipe

Recipe Ingredients for (mostly) Fat Free Sponge

4 eggs, beaten
4 oz caster sugar
4 oz plain flour
1/2 tsp salt

Recipe Directions for (mostly) Fat Free Sponge

  1. Spray an 8" round tin with light cooking oil to make the cake easy to turn out

  2. Preheat the oven to 180C

  3. Now whisk the eggs and sugar until the mixture is pale, fluffy and doubled in volume

  4. sift in the flour and salt from a good height, and fold using as few strokes as possible

  5. Top gently into your greased tin and bake for 30 - 35 minutes

  6. Fill and top with a low-fat cream cheese icing (beat with icing sugar and lemon juice or vanilla to taste), fresh fruit, or low-sugar jam
