Recipe Ingredients for Mosaic Cafe Roasted Vegetable Salad

2 oz Roasted Vegetables
2.25 oz Feta Cheese Crumbles
2 cups Romaine Lettuce
0.35 waffle, round (7" dia) Waffles, Plain, Prepared From Recipe
2 tbsp Balsamic Vinaigrette
2.963 oz Marinated Italian Chicken Breasts

Recipe Directions for Mosaic Cafe Roasted Vegetable Salad

  1. toss lettuce and roasted vegetables with vinaigrette.

  2. put the lettuce in the serving bowl, sprinkle on the feta cheese, top with the roasted vegetable pieces.

  3. Slice the marinated chicken breast into three flat cutlets, pound with a meat mallet to make them very thin. cook e quickly on a grill or flat-top or non-stick skillet.

  4. Cut the waffle into strips, use only about 1/3 of one waffle on each salad.

  5. Arrange chicken and waffle on top of the salad,

  6. Serve.
