Recipe Ingredients for Morrocon mushrooms and chickpeas

250 g Chickpeas
400 g Tinned tomatoes
1 onion
1 teaspoon ground cumin
1/2 teaspoon ground cinnamon
250 g mushrooms
1 teaspoon honey
175 g cous cous

Recipe Directions for Morrocon mushrooms and chickpeas

  1. Slice the onion and soften with a little oil in a large saucepan for about 6 minutes. Mean while quarter the mushrooms.

  2. Add the cumin and cinnamon to the onion and cook for a further minute. Add the mushrooms and cook for a futher 2 minutes.

  3. Add the tomatoes, chickpeas and honey, stir, cover and leave to simmer whilst the cous cous is swelling. To prepare the cous cous pour 250 ml boiling water over the cous cous, cover and leave for 6-7 minutes. (You can add some apricots or toasted cashews to the cous cous to add flavour and texture). Serve up with some green beans.
